Ugali is a Kenyan meal that is prepared in most of the house hold whether for lunch or supper as it fits both occasions perfectly. This meal is most enjoyable while hot.
When Ugali gets cold, it’s not as enjoyable and therefore most people end up throwing away the leftovers. In this article, I’m going to show you how to make a delicacy out of the leftover ugali instead of throwing it away.
To make this, we need:
Left over ugali (cut into your desired shapes).
1cup of breadcrumbs.
3 eggs.
Salt to taste.
Cooking oil.
Method.
In a bowl, beat the eggs using a whisk or fork. Add the salt and whisk until runny.
Dip the ugali into the eggs and make sure they’re coated on all sides.
Dip them in the breadcrumbs to coat them. Repeat the process with all the ugali pieces and set aside.
Add the cooking oil in a saucepan and put it on fire.
Once the oil is warm, put the coated ugali pieces and deep fry until crispy. Remove from fire.
Note: If you don’t have the breadcrumbs, you can skip them and use only eggs. They are delicious in both ways.
Enjoy the snack while hot with family or friends.
