Don’t Eat Fresh Bread The Worst Way To Eat Bread Is When It Is Freshly Baked It Spikes Sugar Levels
Ghanaian chef Prynz has cautioned the public against consuming freshly baked bread, saying it is the worst way to eat the staple because it causes a rapid spike in blood sugar levels.Zetta Ghana report (7 November 2026); GhanaWeb coverage of the chef’s comments.
In comments shared on 7 November 2026, Chef Prynz stated: “Don’t eat fresh bread. The worst way to eat bread is when it is freshly baked. It spikes your blood sugar levels.”
He explained that white bread is largely composed of starch. When the bread is eaten hot from the oven or bakery, the starch is easily broken down by the body, leading to a quick rise in blood glucose. According to the chef, allowing the bread to cool, or better still freezing it and toasting it later, changes the structure of the starch.
Freezing causes the starch molecules to rearrange into a form known as resistant starch. This type of starch is digested more slowly, resulting in a gentler effect on blood sugar levels. Toasting the frozen bread further supports this process.
The advice has circulated widely on social media and food platforms, prompting discussion among consumers about everyday eating habits. Bread remains a common part of many Ghanaian breakfasts and snacks, often eaten fresh from local bakeries.
Nutrition experts note that refined white bread generally has a high glycaemic index, meaning it can raise blood sugar quickly, especially when eaten alone or in large amounts. Pairing bread with protein, healthy fats or fibre can help moderate the response.
While Chef Prynz’s recommendation is not a substitute for medical advice, it reflects growing public interest in how common foods affect blood sugar, particularly among people managing diabetes or seeking to improve their diet.
