YouTuber Gav Murphy, 41, said Honey, 28, has been learning his native language via the Duolingo app and has been practising speaking it to their dog, Coco.
The pair met on Instagram, but immediately hit it off after discovering their shared love for films.
"We just talked about films for six or seven hours, and we haven't stopped talking about films since," he said.
Speaking on the BBC Radio Cymru's 'Beti a'i Phobol', Murphy, originally from Caerphilly, said that he often speaks about Wales with his girlfriend's family.
He said that Honey, the youngest of Jonathan Ross and his wife Jane Goldman's three children, has an "incredible" memory, which helps when learning a new language.
"It's really good because she's so clever and has this memory – her memory is bonkers," he said.
The couple live in London, so opportunities to practise are scarce, but Murphy encourages Honey, who is a writer, podcaster and model, to practise speaking the language to their dog.
He said: "She lacks confidence when it comes to speaking it. But because I speak Welsh with Coco, I try to get her to speak Welsh with Coco too."
Adding: "'Well, if you speak Welsh with Coco, she's not going to tell you if you're wrong'."
Video producer Murphy graduated in Film and Television Studies from Aberystwyth University in 2007.
He has lived in London for years, working as a content producer and presenter of videos and podcasts, as well as a reviewer of games and films.
He is now one of the best-known faces of the YouTube gaming channel, RKG, which he co-founded in 2019.
Honey Ross was raised in Hampstead, north London and is known as a feminist campaigner calling for respect for women regardless of their size, shape or skin colour.
She was a co-founder of the Pink Protest movement in 2017, which campaigned for women's rights, including securing UK government funding to tackle period poverty.
"She started doing that when she was really young, and I don't think she realised just how full-time it was," said Murphy.
"She's changed laws. She was doing a lot of feminist work, and she was doing this stuff with a couple of other women and they were literally changing laws around it.
"She was so good at doing stuff, but it takes up so much time and it takes up so much of your life."
Since meeting Honey, Murphy has got to know her family and gets on well with her father, as they are both "professional silly-billies" and like to laugh, he said.
As one of Britain's best-known TV presenters for decades, Jonathan Ross has met many famous people, and Murphy loves hearing his stories.
He said: "If we're watching films or something like that, I always ask him about Anthony Hopkins, Tom Jones, Welsh people and stuff like that.
"He's met everyone and has stories about everyone, and I want to hear them."
