Potatoes grow on the roots of solanum tuberosum plant. They are rich with many nutrients for our bodies and the good news is that we are in that time of the year that yields this food staple plentifully.

When resistant starch in potatoes get to the large intestines, it is digested by gut bacteria and converted into short chain fatty acids called butyrate.
