But has he pushed them too far in his new Channel 4 series?

At Alder Hey Children’s Hospital, he got NHS chiefs to ditch frozen waffles in favour of worm pizzas. At Cineworld Cinemas, he offered popcorn ice cream and an inside-out hot-dog, with the sauce inside the sausage.

Next Tuesday he faces even more opposition when he takes on the in-flight catering on British Airways, before tackling the Royal Navy.

Controversial: Heston Blumenthal continues to introduce some interesting theories in his latest TV series

Throughout the series, Heston, 44, has needed to overcome change-resistant cooks who think his Michelin award-winning restaurant, The Fat Duck, in Bray, Berkshire, has little to do with their work.

With BA, Heston says it was the chance to create good food at several thousand feet that persuaded him to take on the entire series.

‘I always wanted to know what happens to us when we eat in the air, instead of on the ground, so the BA challenge was the hook for me taking on this whole project,’ he says.

‘During a flight to Dubai, I was a trolley dolly,’ he smiles. ‘I went down the aisle in economy, business and first, saying “Ice and lemon?” and serving meals. Two years ago I couldn’t have done that. I’d have wanted the floor to open up and swallow me, but I’ve got used to working with TV cameras now.

‘What really surprised me is that the food that leaves Gate Gourmet, who supply BA, is quite impressive. But by the time it arrives at the passenger, it’s dreary and grey. If you paid for that in a pub, you’d send it back!’ he storms.

‘I was trying to show what physically happens to the food when it’s reheated in the plane.

‘I discovered that when steak came out of the Gate Gourmet kitchens, it was nice and pink and the vegetables were green, yet when we were served it in the air, the steak was grey and the vegetables were brown. So I wanted to cook meals from scratch.’

Heston tried to cook salmon and steak in the plane’s tiny galley kitchens, but this ended in disaster.

‘It was carnage because there was no space,’ he says.

Back at his laboratory, Heston decides that if the menu is altered, it will cope better with the cabin pressure and so will the passengers. Food in a pressurised cabin tastes different to being on the ground, due to the lack of humidity. The sense of smell is what gives food its flavour and it’s regulated by the moisture in our nostrils.

‘Nasal sprays are the way forward,’ he claims, excitedly. ‘As the humidity on the plane is so low, you squirt a liquid up your nose to combat it.’ Not surprisingly, BA bosses sniffed at his suggestion.

Next on the menu: The 44-year-old chef looks at food on HMS Turbulent

In the final episode of the series he visits submarine HMS Turbulent, in Plymouth, to improve the food offered to our sailors by the Royal Navy. ‘My challenge was to make their food better, so they’d be more motivated.

‘What amazed me was that this sub cost half a billion pounds, yet they feed crew three meals for £2.40 per day. It’s less than a police dog gets, less than a prisoner gets and yet these people are protecting our nation. I think it’s disgusting.

‘I discovered that they have a nuclear generator on board, which produces oxygen, so they never have to surface. The only reason they surface every three months is because they run out of food.

‘I suggested they prepare dishes at their kitchens ashore. They are vacuum packed, so take up less space than fresh food. They heat them through at sea. The crew still gets a full cooked breakfast, though. If they didn’t get that, there’d be a mutiny! ‘These guys deserve the best. What they do for us is amazing.’

The Ministry of Defence is considering adopting Heston’s catering methods.

A defence source said: ‘Heston’s input was very useful. The food would need to be packed by the food suppliers for the armed forces and we need to consider budget, but it’s definitely something that is being talked about.’

– Mission Impossible is on Channel 4, on Tuesday, at 9pm

Read more:
Heston Blumenthal turns trolley dolly for his latest TV challenge

By Paula Kerr Last updated at 10:24 PM on 3rd March 2011 Heston Blumenthal has never been reluctant to push boundaries.
